A brilliant menu packed with techniques and flavours. We'll start with a simple but great tomato pasta sauce. Whilst that's bubbling away, roll your sleeves up and get stuck into pasta making. You'll make your own ravioli stuffed with rocket and pine nuts. Next we↑ll take on Nick's favourite sauté dish: tarragon chicken. You↑ll learn how to break down a chicken, about pan frying and caramelisation, deglazing, reduction sauces and, of course, building flavour. Dessert is no ordinary chocolate cake, indeed it↑s rather cheffy and uses a meringue base instead of flour to give the lightest, most moist cake every to have passed your lips. All in, it↑s a belter of a day!
