Nick's passionate about the complex flavours of Asia - which doesn't necessarily mean super hot chillies! It's all about matching spices and creating harmony on the plate in this fresh, zingy and gently spicy pan-Asian menu.

You may be surprised that beef and coconut go so well! This is a novel starter, served in little lettuce parcels - with super crispy noodles, and a gently spiced fried recipe using best Scottish beef.

The salmon is a lovely dish - you'll learn the Japanese way with rice and beautiful marinated salmon - this main course works as a dinner party main but can also be a weekday staple. It's a real favourite here at the school.

The pud today is one of Nick's favourites. A light as air souffle, complemented with the freshest homemade coconut and lime sorbet.

Everything you learn - from perfecting cooking meat and fish, to perfect puds - can be adapted to other ingredients. Nick will be full of excellent advice and tips on the day, as well as giving hands-on help while you cook today.
