I love India and its food. This class is all about sharing my favourite Indian dishes with you, from those I've eaten on the subcontinent, and in the best UK restaurants, too. The Cook School will smell amazing all day - you're in for a treat.
I'll help you build each dish from scratch, with homemade spice pastes and sauces. These are all easy to recreate at home, and straightforward to adapt to other meats and veggies.
Recreating authentic Indian dishes at home is properly satisfying. We start with fragrant curry pastes and sauces, cooking succulent butter chicken - a tender creamy curry, and a smoky pork vindaloo - made using my special smoke-in-a-pan trick!
We'll also perfect those side dishes that complete every Indian meal - including dhal, pakora and flatbreads. And for pud, it's Indian ice cream - kulfi, subtly flavoured with saffron and pistachio and served with mango and lime. Come with me on a journey around the subcontinent.
